'Cream' of Mushroom Soup, GF, DF, V

Arrowroot starch can be found at your local natural foods store in the same aisle as the gluten free baking products, near the corn starch.

3 Tblsp Coconut Oil
½ small onion, diced
8 oz. mushrooms, chopped (I used baby bellas)
3 cloves minced garlic
1 Tblsp Coconut Flour
1 Cup Vegetable Broth
1 Can Coconut Milk (with the cream)
1 Tblsp Arrowroot Starch
1 Tblsp Water

Salt & Pepper toTaste


In large saucepan heat coconut oil over med-high heat. Stirin Onions and Mushrooms. Cook until onions are translucent. Sprinkle coconutflour over mushrooms and onions. Stir, cooking until mixture begins to brown.Pour in Broth and Milk. Bring to a boil.

In separate dish, mix together water and starch to make a “slurry.”

Slowly stir starch slurry into soup until desired thicknessis reached.

Season w/ Salt & Pepper.


Excellent on it's own or used in everyone's favorite Thanksgiving side you can feel good about feeding every member of the family: The Green Bean Casserole.
